GOURMET POTATOES Kathy McFeaters

6 medium potatoes 1/3 c. onion
1/4 c. butter 1 1/2 c. sour cream
1 tsp. salt 1/4 tsp. pepper
2 c. shredded Cheddar cheese crumbled bacon

Cook potatoes in skin, let cool. Peel and shred coarsely. Over low heat cook onion in butter. Add cheese, stir until almost melted. Remove from heat and blend in sour cream, salt, and pepper. Fold in potatoes. Put in a greased 2 quart casserole. Dot with butter and bacon. Bake at 350 degrees for 25 minutes.
