Those in England and Europe will know all about the Salad PLATE, but here in North America it is almost impossible to get such an item in a restaurant and many people consider a salad as just a side dish. It can be a full meal and is my favorite in the spring when fresh produce is available.

 

SALAD  PLATE

 

On a bed of fresh lettuce arrange any or all of the following.

 

Fresh baby carrots

Sliced cucumber

Fresh multiplier onions

Diced “Nutmeete” (meat substitute)

Tomato pieces

Diced cheese

Hard boiled eggs (halved or quartered)

Cooked small new potatoes (hot or cold)

Macaroni salad

Potato salad

Canned baked beans (cold)

Any other fresh veggies of your choice

 

 

Drizzle with the salad dressing of your choice.

 

Note:- If you take the time to arrange the ingredients tastefully on the plate this can look like one of those fancy gourmet meals. I always run out of room on the plate!

Non vegetarians can add any cold meats of their choice.

 

 

MACARONI SALAD

 

There are 100s of recipes with shrimp or whatever in them, try this without.

 

Cooked cold elbow macaroni

Diced fresh tomato

Diced Hard boiled egg

Mayonnaise

Pepper to taste

 

Mix all together in quantities to suit, works well with over ripe tomatoes as it tends to be a little dry without.
