VEGATABLE CASSEROLE  (serves 4 – 6)

 

1 can vegetarian baked beans  

1 can condensed tomato soup  

4 large potatoes

2 cups diced “proteena” (meat substitute)

1 cup frozen peas

1 cup diced tomato      

1/4 cup chopped peppers

1 cup chopped onions              

1 cup grated cheese     

1 tbls fresh or dried lovage

salt & pepper to taste

 

You may add any other left over vegetables you have.

Quarter potatos, boil till done, mash about 2/3 reserve remainder.                                             

Brown “proteena in skillet add onions & peppers & lovage, when almost done

Add tomato’s and cover, simmer till all blends, add a little water if to dry.

Dice reserved potatoes, place all but cheese and mashed potatoes in large casserole. 

Spread mashed potatoes on top and sprinkle with cheese.

Heat in oven 300f for ½ - ¾  Hour. Then grill top till cheese nicely browned.

 

Note;- It is the cheesy potato topping that makes this look and taste good, more topping and less filling still works, use up whatever you have, any meat substitute will work.

For a richer top blend in an egg or two with the mashed potatoes.

 

 

QUICK VEGATABLE CASSEROLE (the speedy version of the above)

           

1 can vegetarian baked beans  

1 can condensed tomato soup  

3 cups leftover boiled potatoes (quartered)        OR Frozen Hash Browns

2 cups leftover mashed potatoes  OR use instant mash potatoes

1 cup frozen peas        

1/4 cup chopped peppers

1 cup chopped onions

2 cups of any leftover cooked nut or soy meat etc.                   

1 cup grated cheese     

 

You may add any other left over vegetables you have.                                      

Sauté onions & peppers, place all but cheese and mashed potatoes in large casserole. 

Cover and microwave till thoroughly hot.

When cooked spread mashed potatoes on top and sprinkle with cheese.

Microwave till cheese melts.      Then grill top till cheese nicely browned.

 

Note;- It is the cheesy potato topping that makes this look and taste good, more topping and less filling still works, use up whatever you have, it is never the same every time.
