A complete meal that with practice can be on the table in 45 mins from start.

 

 

 

CAULIFLOWER CHEESE    

 

6 medium size potatoes

1 small head of cauliflower       

2 large cooking onions 

3 cups thick cheese sauce        

1 cup grated cheese of your choice                                                                                                                              

 

Cut potatoes into aprox 1.5" chunks and place in large kettle with water to well cover.

Place on high heat to boil, meanwhile cut cauliflower and onion into 1" chunks

When potatoes just barely tender (approx 10 min) add cauliflower,       

when cauliflower is barely tender add onions.

Remove and thoroughly drain when cooked.  DO NOT OVER COOK!

Meanwhile make thick cheese sauce.(cream like consistency)   

Place all in large casserole and mix gently.

Top with grated cheese. For “company” add slices of tomato on top.

Place under grill and heat until cheese is just starting to brown.

Vegetables may be cooked separately if you wish!

 

Note;- It is important to well drain the veggies and make a thick sauce, it is not as good if it finishes up watery rather than creamy!

 

 

 

 

CHEESE SAUCE

1/4 cup butter or margarine      

˝ - 1 cup flour

2 - 3 cups milk

2 cups grated cheese   

 

Melt butter in 4 cup container in microwave, add flour slowly stirring until thick paste is made, add approx 1/2 cup milk and mix thoroughly.

Microwave  approx 2 min till mixture starts to  thicken.

Stir in remainder of milk and microwave for approx 5 min stirring every 2 min or untill mixture starts to thicken.  

Add cheese and microwave until cheese is melted and mixture is as thick as desired.

           

note:-This may be done in pan on the stove but you must stir CONSTANTLY.

For white sauce omit cheese!
