Both of these are quick, filling and easy to prepare.
CHEESE PIE
3 cups grated hard cheese of your choice (enough to fill pie plate)
1 medium onion chopped
2 tablespoons flour
4 eggs 1 cup milk
1/2 tsp salt if desired.
1 tbsp mustard
2 tbsp catsup
1 tbsp Worcestershire sauce
Use up any left over cheese, a mixture of varieties works well.
Mix cheese, onion and flour together. Spread in greased deep pie plate or baking dish.
Beat eggs slightly add milk, salt, mustard, catsup and Worcestershire sauce.
Pour over cheese mixture. Cook uncovered in 350F oven until set 35 - 40 min
(knife inserted in center comes out clean when cooked)
Let stand 10 minutes before cutting.
Serves 3 - 4
BAKED POTATO OMELET
2 cups frozen hash browns
1 onion chopped
1 cup frozen peas
1/2 cup sw peppers chopped
6 large eggs
1 cup milk
optional 1 cup grated cheese
salt pepper seasoning to taste
For a plain baked omelet omit vegetables,
or omit hash browns and serve with baked or roast potatoes.
Fry potatoes, peppers and onions till lightly browned put in greased shallow baking dish
Add peas and cheese , mix. Beat eggs, milk and seasoning in bowl - add to casserole
Bake uncovered at 325 for 30 – 45 min till set.
(knife inserted in center comes out clean when cooked)
Let stand 10 min before serving
Serve with tossed salad - serves 3 – 4
