Mock Goose

1 Boned Lamb Shoulder
4 chopped lamb's kidneys
1 chopped onion
fresh bread crumbs
Fresh herbs
1 egg to bind

This dish when transposed to Australia, by the early Irish settlers, became known as Colonial Mock Goose.

Mix breadcrumbs with onion, herbs, kidneys and egg. Stuff shoulder. Roll up and secure with string or skewers. Cook approximately 1 to 1/2 hours in moderate oven. Serve with vegetables, and a gravy made from pan juices.
