Irish Spiced Beef
7 lbs beef
3-4 bay leaves
9 cloves
5 blades mace
1 clove garlic (crushed)
2 oz.brown sugar
1 oz. saltpetre
1lb. salt
fresh herbs
3 carrots sliced
3 chopped onions
This recipe is often served at Christmas time in Ireland. It is the only time of
the year that you can buy Spiced Beef in the butcher's shops. This recipe must
not be hurried in preparation.
Mix all seasoning ingredients together, with the exception of the carrots,
onions and herbs.
Rub seasoning into meat. Then place meat on remainder of seasoning.
Keep cool. Rub seasoning into meat each day. After 7 days put meat into a
saucepan and cover with cold water.
Bring to boil, and then simmer for about 5-6 hours, or until meat is tender.
Place meat on flat surface, and cover with a heavy object. When meat is cold it
will be ready to eat.
