Dock Pudding

Dock Pudding is a dish in which dock leaves – bistort-polygonum bistorta – nettles, onions, and oatmeal are fried together – see Recipe.

This was traditionally eaten on Passion Sunday, the fifth Sunday in Lent, and the dock is hence known as the passion dock. The dock plant is a sweet variety with pink bottle-brush flowers and pointed leaves, and is not the common cow dock.

The vegetable may have been eaten as a purgative after the heavy foods of the winter months.

On 13th April 1971, the first World Championship Dock Pudding Making Championship was held in Hebden Bridge. The winner was Mrs Betty Horsfall of Hebden Bridge. The championship is held at the Mytholmroyd Community Centre in April
