HISTORY OF THE CORNWALL CHEESE AND BUTTER BOARD |
HONORABLE GEORGE S. HENRY, MINISTER OF AGRICULTURE, ONTARIO |
N taking advantage of the offer of an opportunity of saying a few words
in your historical publication, I desire, first, to commend the enterprise
of those who have the publication in hand. It is a good thing to preserve
the records of the men and methods which have contributed to the upbuilding of the dairy industry in this Province. It seems to me that we too often
overlook the debt we owe to those who struggled in earlier years with small
things to bring about the better conditions which we are enjoying to-day.
It is only a little over fifty years since the manufacture of cheese was undertaken in this Province, and yet to-day it has attained such proportions that it is a big factor in the economic and national life of the country. Last year, the value of the dairy output of Canada was estimated at approximately two hundred million dollars, and of this upwards of half is to the credit of the good old Province of Ontario. |
