Irish Soda Bread


IRISH SODA BREAD
This is a traditional Irish bread raised with the addition of baking
soda. Before putting it in the oven, don't forget to mark a cross in the
middle to let the devil out!

1 lb. wholemeal flour.
8 0z. self-raising flour (all purpose in the U.S.)
1 dessertspoon castor sugar (fine sugar but not confectionary sugar)
1 teaspoon salt.
1 teaspoon baking soda and bicarbonate soda.
Approx 12-15 fl. oz. buttermilk.

Put the two flours into a mixing bowl. Add remaining dry ingredients and
mix so as to incorporate and aerate. Lastly make a well in the centre
and combine with enough buttermilk to make a moist but firm dough. Turn
out onto a floured surface and knead lightly. Form into a rounded shape
and place onto a floured baking sheet. Using a knife, mark a cross
pattern on top.
Bake at 400 degrees F. for 40 minutes or until the bread
is brown and sounds hollow when tapped. Cool on a wire rack.
